Garnachas Istmeñas -  Garnachas are small snacks and these are from the isthmus of Tehuantepec. They are mini-corn tortillas topped with asiento (cracklings), shredded chicken, pickled red onion, salsa de chile de arbol/tree (a small red chile), and cotija cheese (Mexico's version of Parmesan).

Enfrijoladas with Chorizo -  Corn tortillas dipped in Oaxacan Black Beans made with Epazote (a flavorful herb) and Golden Manteca (the remaining golden lard after frying Pig Skins), folded and served with Oaxacan Chorizo de Bolita (Sausage rolled into a Ball), Sliced Onions, Sliced Avocado, and Queso Fresco (Fresh Soft Cheese).

Mole Verde de Chayote y Camaron - a light and soupy Green Mole made with fresh herbs and simmered with Chayote (a green member of the squash family, aka mirliton) and Shrimp

Passion Fruit Coconut Nicuatole (a type of corn chilled custard) - a corn masa sweet chilled dessert, fruit flavor subject to change

Agua de Jamaica - Fresh Water made from Hibiscus Flowers
