We will create a fond (brown the protein very well), deglaze (scrape up all the delicious browned bits), and whisk in a bit of butter to make a Pan Sauce.
Then you can capture all the flavor left in the bottom of the skillet and create an easy and delicious Pan Sauce when next you sauté your next dinner.
We will learn Classic French Mother Sauces including Bechamel/White Sauce, Velouté/Stock Sauce,
and Hollandaise/Whipped Butter & Yolk Sauce (which will be served with a side of cardiac paddles – naw! you only eat it once a year )
