This course is perfect for anyone who desires to learn the essential skills necessary to become comfortable in the kitchen. Whether you are a teen, college student, newlywed, or newly retired, this series will get you started. We have devised three (2 1/2-3 hr) classes where you will cover the basics, make an entire meal from scratch, and feast on the delicious results. Each week you will build on your skills from the previous class while you perfect your knife technique, gain knowledge, and build ever increased confidence in your cooking abilities!

CLASS ONE

  • Fresh Tomato Basil Soup (from scratch)

  • Cooking with Eggs (Omelette, Scramble, Frittata)

You will learn how to…

Handle your knife, basic chopping skills, peel and dice tomatoes, chop and julienne basil, use a blender and strainer, control heat and temperature, peel and mince shallots and fresh herbs, make a vinaigrette and a creamy dressing, create a variety of salads and make an omelette, frittata, or scramble and how to properly use and care for a non-stick pan.

CLASS TWO

  • Perfect Roast Chicken with Au Jus Sauce
  • Creamy (No Lump!) Mashed Potatoes
  • Green Bean and Corn Saute
  • Chocolate Chip Cookies

You will learn how to…

Handle raw chicken properly, season and prepare your chicken, determine the cooking time, proper temperature for being perfectly cooked, deglaze your pan, create an au jus sauce, cut your cooked chicken, choose the proper potato for the task, make mashed potatoes with no lumps, shuck and cut corn off the cob, blanch a green vegetable, saute and season vegetables, use a dry and wet measure, use a stand mixer, cream butter and sugar, and tell when your cookies are perfectly done.

CLASS THREE

  • Vegetable Pot Stickers w/Easy Dipping Sauce
  • Beef and Broccoli Stir Fry
  • Perfect Steamed Rice
  • Green Tea Ice Cream w/Sauteed Caramelized Bananas

You will learn how to:

Chop and shred raw vegetables, all about basic Asian ingredients, make a dipping sauce, fill and seal wonton wrappers, pan fry and steam pot stickers, slice meat against the grain, cut broccoli into florets, use a wok and stir fry, identify different types of rice, make perfect rice every time, prepare a base for homemade ice cream, use an ice cream machine, slice and caramelize bananas, create a dessert pan sauce, and perfect your knife skills.
